3 Powerhouse Veggies Recipes

1 Sweet Carrots

Prep Time: 0 minutes; Cook Time: 15 minutes Recommended Serving Size: 1 cup; Serves: 4

Ingredients:

          2 tbsp. brown sugar 

          4 cups baby carrots 

          1 tbsp. butter 

          ½ tsp salt 

          1 cup water 

Directions:

Add the water, salt, butter, and brown sugar to the instant pot. Mix well to combine. Set to sauté and add the carrots; tossing to coat. Seal the lid into place. 

Set on steam for 15 minutes. Once done, use the quick release function to remove the pressure, and take the lid off. 

Set to sauté, and cook until all of the liquid has evaporated. 

2 Sweet Potatoes

Prep Time: 0 minutes; Cook Time: 15 minutes Recommended Serving Size: 1 cup; Serves: Varies

Ingredients:

          Olive oil 

          Sweet potatoes 

          ½ cup water 

Directions:

Wash the potatoes and dry. Rub them with some oil and wrap in tin foil. 

Put the water in the instant pot and set in the trivet. Place the potatoes on the trivet. 

Close and seal the lid. Set to high for 15 minutes then quick release the pressure. 

3 Spaghetti Squash

Prep Time: 10 minutes; Cook Time: 17 minutes Recommended Serving Size: 1 cup; Serves: 4

Ingredients:

Spaghetti squash 

1 cup water 

Directions:

Slice the squash in half, and get rid of all the seeds. Put the steamer basket in the pot. Add the water.

Place the squash into the steamer basket. 

Cover and seal. Set to cook on high for seven minutes. Once done, use the quick release function to remove the pressure. Carefully take the squash out and shred with a fork. 

Serve with your favorite pasta sauce.
